Something about chicken salad just says « summer », right? Today I’m sharing a recipe that I created for a blogger exchange last summer with Home Crafts by Ali. I decided to put my own spin on a traditional Waldorf salad, to make the perfect summer sandwich! (And just in time for Canada Day tomorrow and the Fourth of July – now you know what to do with all that leftover BBQ chicken.) Here’s how to make a Waldorf chicken salad:

Waldorf-Inspired Chicken Salad

This salad is simple and great for a summer get-together. The best part is that you can put a fresh spin on leftover chicken! Which makes it a whole new dish, right? 😉 I’ve suggested a preparation for the chicken, but any herb-based seasoning would pair well.

For the dressing:

1/3 cup of sour cream

3 tbsp of mayonnaise

2 tsp of apple cider vinegar

zest of 1/2 a lemon

3 tsp of chopped fresh dill

1 minced (medium/large) garlic glove

For the salad:

1 cup of slices red grapes

1/2 cup of sliced cucumber

1 chopped granny smith apple

2 chicken legs or breasts, skins removed

For the chicken seasoning:

A pinch of grated nutmeg

1 1/2 tsp dried or fresh thyme

Olive oil

Salt

Pepper

  1. Combine all the ingredients for the dressing and refrigerate for at least half an hour.
  2. Season chicken with nutmeg, thyme, olive oil, salt and pepper. Bake at 375° until juices run clear.
  3. Let the chicken cool completely before chopping it into medium-small chunks.
  4. Slice the grapes and cucumber, and chop the apples.
  5. Combine chicken, grapes, cucumber, and apple. Mix with dressing. Season to taste with salt and pepper.
  6. Serve on toasted baguette and garnish with a sprig (or two!) of dill.

I recommend serving this salad as a sandwich, but it would also make a great topping for a canapé-type appetizer. If you wanted to add a little more crunch to the salad, you could add some toasted walnuts (which are traditional to a Waldorf salad).
