Summer is here in all its glory: the peonies are bursting (finally!), the grass is lush and gorgeous (we’ve had a lot of rain), and the temperature is perfect (not too hot but not cold either!). For those of you just joining in on the Spectacular Summer Blog Hop fun for the first time, a group of 11 talented bloggers are sharing their best summer recipes, ideas, crafts, and projects over the next two and a half months. Today, Jen of JENerally Informed has an absolutely scrumptious (and incredibly easy!) peach cobbler recipe, perfect for camping or a last-minute dessert emergency. I don’t know about you, but during the hot summer months, I am really reluctant to make complicated desserts when we have company. Simple is best, I feel!

What was your favourite food when you were a child?
I am a Latina, so give me a good taco or some rice pudding and the world was about a perfect a place as it could be. Actually the same still holds true today. Tacos are pretty much the way to my heart.
What’s your favourite family recipe?
There are too many to count! Recently though I am especially pleased with the fact that I was able to master a special family recipe that had previously been my mom’s specialty alone. For a few years now since my mom had her stroke our holidays had been a little sadder without that particular dish, but this last Christmas I decided to try and make it and happily totally NAILED it!
